Cheese Enchiladas and Homemade Red Chili Sauce – Serves 4
For the Enchiladas:
14 corn tortillas
16 oz shredded cheese of your choice (Mexican blend is recommended)
For the Red Chili Sauce:
6 Tablespoons canola oil
3 cloves fresh garlic
3 Tablespoons flour
3 Tablespoons red chili powder (mild to hot or a mix of both)
2 teaspoons cumin powder
1 teaspoon ground coriander seed
1 teaspoon onion powder
1⁄2 teaspoon salt
4 cups water
Directions:
1. Preheat oven to 350 degrees and use nonstick spray to grease a 9×13 baking dish. Set aside.
2. Put canola oil in a large skillet and add chopped garlic. Let this just sit without heat as you prepare the flour mixture.
3. In a bowl combine flour, chili powder, cumin powder, coriander, onion powder and salt until thoroughly mixed. Prepare a measuring cup with water.
4. Heat oil just until garlic starts to sizzle. Add flour mixture and stir with a wooden spoon until smooth.
5. As soon as combined add water and stir until thickened. You may need to add additional water to get to desired thickness. Season with additional salt and spices to your liking.
6. Once cooled, spread ¾ cup of enchilada sauce into the bottom of the baking dish.
7. Lay one tortilla flat and add ¼ cup of shredded cheese into the center and rollup. Place seam-side down into baking dish. Roll the rest of the tortillas with cheese and place into dish.
8. Spoon enchilada sauce over the rolled tortillas until completely covered. Add additional cheese on top.
9. Place foil over the top of the dish and place in oven for 25-27 minutes. Allow enchiladas to rest for 10 minutes and then serve.
Enjoy!
