One of the simplest and best picnic recipes I have come across! Perfect for company or a summer birthday.


1 Box of Pillsbury Vanilla cake mix

Ingredients listed on back of bake box (egg, water, oil)

1 (3.5 oz ) box of Vanilla Instant Pudding

2 cups of cold milk

1 (8 oz) container of Cool Whip, thawed

1 quart strawberries (with tops removed and strawberries – ½ sliced and the other ½ cut in half lengthwise)


1/3 c chopped pecans (totally optional, but you’ll be glad you did)



Preheat oven to 350 degrees

Prepare cake mix as directed and bake in greased 9x13 pan

Prepare pudding as directed and place in refrigerator

Clean and halve strawberries, sprinkle with sugar to taste (I like mine more on the tart side so very minimal)

When cake is finished, cool slightly and then transfer out of pan to rack. Cool completely.

Once cake is cooled, slice in half lengthwise & carefully transfer bottom of cake back into 9x13 cake pan.

Cover cake with pudding

Arrange the sliced strawberries on the pudding

Layer the other ½ of cake

Cover top of cake with the thawed cool whip

Arrange the ½ strawberries on top.  I line them up, but you can do this however you wish.

Sprinkle the chopped pecans on top if you choose (yummy!)

Refrigerate for at least 4 hours before serving.  This recipe is even better the next day, so go ahead and make ahead of time.
